Pasta with zucchini and lemon

The lemon makes the pasta with zucchinis taste wonderfully summery.

Zucchini lemon sugo

0.5 onions
0.5 garlic cloves
1 zucchini
0.5 chili peppers (red)
3 tbsp olive oil
80 ml white wine
80 ml vegetable stock
0.5 lemons
50 g Parmesan cheese
100 g cream cheese
salt
pepper

Penne pasta with sugo

30 g salt
3 l water
300 g penne
300 ml zucchini and lemon sugo (homemade)

Zubereitung

Zucchini lemon sugo

  1. Peel and dice the onion.
  2. Peel and finely dice the garlic.
  3. Dice the zucchini into bite-sized pieces.
  4. Deseed and dice the red chili.
  5. Heat the oil in a medium saucepan.
  6. Sauté the onion, garlic, zucchini and chilli cubes in the hot oil until the onion cubes are translucent.
  7. Increase the heat and deglaze the sautéed vegetables with the white wine and allow the sauce to simmer until it no longer smells of alcohol.
  8. Top up the sauce with the vegetable stock.
  9. Simmer the sugo.
  10. Grate the yellow part of the lemon zest.
  11. Grate the Parmesan.
  12. Juice the lemon.
  13. Stir the cream cheese and grated Parmesan into the sugo.
  14. Season the sugo with salt, pepper, lemon juice and zest.

Penne pasta with sugo

  1. Cook the pasta in plenty of boiling, well-salted water in an open pan for approx. 8 minutes until al dente.
  2. Drain the pasta.
  3. Mix the pasta immediately with the hot sauce.
  4. Leave the pasta to stand with the sugo.

UNser TIPP

Zucchinis contain a lot of water, so very little liquid is needed to cook them.
