Crispy bacon cubes

50 g bacon cubes

Black bread croutons

Fat from crispy bacon cubes (homemade)
1 slice of black bread

Franconian salad dressing

1 tbsp apple juice
2 tbsp white wine vinegar
1 tsp medium hot mustard
2 tbsp vegetable oil
salt
pepper
sugar

Franconian dressed lamb’s lettuce

100 g lamb’s lettuce
4 tbsp salad dressing (homemade)
50 g crispy bacon cubes (homemade)
black bread croutons from a slice of bread (homemade)

Zubereitung

Crispy bacon cubes

  1. Fry the bacon cubes in a small pan over a medium heat for approx. 5 minutes until crispy all over.
  2. Remove the bacon cubes from the bacon fat with a slotted spoon and degrease on a plate with kitchen paper.

Black bread croutons

  1. Dice the black bread to the size of the bacon.
  2. Fry the black bread cubes in hot bacon fat over a medium heat for approx. 5 minutes until they have turned into crispy croutons.
  3. Remove the black bread croutons from the bacon fat using a slotted spoon and remove the fat from the crispy bacon cubes on kitchen paper.

Franconian salad dressing

  1. Mix the apple juice with the white wine vinegar and mustard in a medium bowl and season with salt, pepper and sugar.
  2. Whisk in the vegetable oil, first drop by drop and then in a thin stream, until a creamy vinaigrette has formed.

Franconian dressed lamb’s lettuce

  1. Just before serving, add the washed, cleaned and well-dried lamb’s lettuce to the vinaigrette in the bowl.
  2. Mix the salad and vinaigrette together thoroughly.
  3. Sprinkle the salad with the black bread croutons and diced bacon.

UNser TIPP

You can also use young lettuce leaves instead of lamb’s lettuce. Diced ham is also suitable instead of bacon, but you will need a little oil to fry it, as ham does not contain enough fat of its own.
