1 orange
0.5 vanilla pod
0.25 l milk
4 eggs
5 tbsp sugar
2 EL Mehl

Zubereitung

  1. Grate the zest from the orange and place in a small pan.
  2. Slit the vanilla pod lengthwise with a small knife and scrape out the vanilla pulp.
  3. Add both the scraped-out pod and the vanilla pulp to the orange zest in the small saucepan.
  4. Add the milk to the orange zest and vanilla in the saucepan and bring to the boil.
  5. Remove the spiced milk from the heat and leave to cool for approx. 5 minutes.
  6. Separate the eggs and place the egg yolks in a mixing bowl.
  7. Beat the egg yolks with the sugar using a hand blender for approx. 8 minutes until creamy and very light and fluffy.
  8. Fold the flour into the egg cream using the hand blender.
  9. Stir the cooled milk into the egg cream.
  10. Pour the egg-cream-milk mixture back into the pan and thicken over a very low heat without boiling, whisking constantly.
  11. Pass the vanilla cream through a sieve and leave to cool.

UNser TIPP

If you sprinkle the warm surface of the cream thinly with sugar, no skin will form.
