Miso soup

The classic soup before sushi. It serves to whet the appetite.

Zutaten für Personen

2 spring onions
2 pk. instant dashi
2 tbsp light miso paste
600 ml water
salt
6 black peppercorns
1/4 cinnamon stick
2 cloves
4 coriander seeds
1 tsp dried wakame seaweed
100g silken tofu
1 spring onion

Zubereitung

  1. Soak the dried wakame seaweed in a bowl of water.
  2. Heat the water and dissolve the dashi granules in it.
  3. Add the peppercorns, cinnamon sticks, cloves and coriander seeds and simmer for 8 minutes.
  4. Clean the spring onions and cut into fine rings.
  5. Drain the silken tofu and dice.
  6. Sieve out the spices.
  7. Stir in the miso paste.
  8. Divide the spring onions, tofu and seaweed leaves between the soup bowls.
  9. Pour over the hot soup.
