Date cake with cinnamon cream

The date cake is a moist oriental cake that makes a wonderful dessert.

Date cake

150 g dates
2 tbsp butter
80 g ground almonds
80 g sugar
0.5 tsp tap water
2 tbsp cornflour
2 eggs
salt
powdered sugar

Cinnamon cream

100 g quark
100 g cream cheese
1 tsp cinnamon
powdered sugar

Zubereitung

Date cake

  1. Finely dice the dates and place in a mixing bowl.
  2. Melt the butter and add to the dates in the mixing bowl.
  3. Add the almonds to the mixing bowl.
  4. Add the cornflour and the tap water to the mixing bowl and stir everything together.
  5. Separate the eggs.
  6. Mix the egg yolks and sugar. Beat with a hand mixer to a very light, very fluffy cream.
  7. Fold the egg foam into the date mixture.
  8. Beat the egg whites with a pinch of salt until stiff.
  9. Carefully fold the beaten egg whites into the batter. Divide the batter between four soufflé dishes.
  10. Bake the date cakes in the oven at 180° C for approx. 20 minutes.
  11. Dust the cooled date cakes with powdered sugar.

Cinnamon cream

  1. Stir the quark and cream cheese until smooth.
  2. Flavor the quark cream with approx. 0.5 tsp cinnamon.
  3. Season the cinnamon cream with powdered sugar.
