1 onion
1 head of white cabbage (approx. 600 g)
1 tbsp clarified butter
1 tsp caraway seeds
5 tbsp vinegar
100 ml Gemüsebrühe
Salz
Pfeffer
Zucker

Zubereitung

  1. Peel and finely dice the onion.
  2. Peel the outer leaves off the head of white cabbage, quarter the head, cut out the stalk and cut the white cabbage into fine strips.
  3. Heat the clarified butter in a pan.
  4. Sweat the diced onion in the warm clarified butter until translucent.
  5. Add the strips of white cabbage to the sautéed onions and sauté.
  6. Add the caraway seeds, vinegar, vegetable stock, salt and pepper to the white cabbage and onions.
  7. Bring the caraway cabbage to the boil, then reduce the heat, cover and simmer for approx. 20 minutes.
  8. Season the caraway cabbage with salt, pepper and sugar to taste.

You can also refine the white cabbage with finely sliced carrots.
