Oriental marinade

1 clove of garlic
1 tsp ground coriander
1 tsp cumin (cumin seeds)
1 tsp ground turmeric
1/2 tsp sumac
2 tbsp grainy Dijon mustard
4 tbsp olive oil
salt
pepper

Chicken with orange and oriental spices

Oriental marinade (homemade)
4 chicken fillets of approx. 120 g each
0.5 oranges
2 star anise
2 cloves
2 bay leaves
100 ml white wine

Zubereitung

Oriental marinade

  1. Peel and finely dice the garlic cloves and place in a small bowl.
  2. Add the mustard, sumac, coriander, cumin, turmeric and olive oil to the diced garlic and stir to make a marinade.
  3. Season the marinade generously with salt and pepper.

Chicken with orange and oriental spices

  1. Place the cold rinsed, dry chicken fillets in an ovenproof dish and brush with the marinade.
  2. Cover the meat, chill and leave to marinate for approx. 10 minutes.
  3. Cut the orange into slices.
  4. Cover the marinated meat with the orange slices.
  5. Pour the white wine into the casserole dish, but not over the meat.
  6. Season the white wine with the cloves, bay leaves and star anise.
  7. Cook the orange chicken in the oven at 150° C for approx. 20 minutes.
