Classic pasta dough

150g normal flour (405)
150 g semolina (pasta flour)
4 egg yolks
2 egg
3 tbsp olive oil
1 pinch of salt

Zubereitung

  1. Place the flour, salt and semolina in a bowl, mix together and make a well in the flour.
  2. Crack the eggs and oil into a separate bowl, whisk and pour into the well.
  3. Using a spoon, carefully mix the egg mixture with the flour from the inside out until a homogeneous batter is formed.
  4. Depending on the size of the eggs, it may be necessary to add a little warm water.
  5. Shape the dough into a ball and knead into a smooth dough on a baking board sprinkled with semolina, wrap the dough in cling film and leave to rest for an hour.
  6. Roll out the dough thinly using a rolling pin or pasta machine and make the desired pasta shapes.

UNser TIPP

Pasta dough can also be made without eggs. To do this, mix 300g double-ground durum wheat semolina “semola rimacinata di grano duro” with 150 ml lukewarm water and knead the dough for a long time.
