Flounder with capers, tomatoes and anchovies

3 garlic cloves
1 onion
2 florets
2 cloves
2 bay leaves
2-3 tbsp capers
4 crushed anchovies
1 tin of tomatoes 800ml
100 ml white wine
olive oil
salt
pepper
sugar

Zubereitung

  1. Preheat the oven to 140 degrees.
  2. Peel and finely dice the garlic and onion.
  3. Heat a pan, add the olive oil and fry the garlic and onions until translucent.
  4. Add the bay leaf, capers, crushed anchovies, canned tomatoes and cloves.
  5. Season with salt and pepper and simmer for 30 minutes.
  6. Remove the flounder from the long bone and the gray skin and divide into portion pieces.
  7. Season the fish with salt and pepper and place in an ovenproof dish.
  8. Drizzle the fish with olive oil and drizzle the sugo over it and cook in the oven at 140° C for 10 minutes.

UNser TIPP

For this Mediterranean dish, you can also use firm fish fillets such as hake, saithe or cod.
