Homemade is much better than bought – our herb mayonnaise

0.5 lemons
1 egg
1/2 tsp medium hot mustard
salt
100 ml vegetable oil

Zubereitung

  1. Juice the lemon.
  2. Crack the egg, separate and place the yolk in a tall measuring jug.
  3. Mix the egg yolk, mustard, a pinch of salt and 2 tbsp of the lemon juice.
  4. Whisk in the oil, first drop by drop, then in a thin stream until a smooth, firm cream has formed.
  5. Season the mayonnaise with salt to taste.

UNser TIPP

You can refine the mayonnaise with garlic or use parsley or other herbs, e.g. basil, tarragon, chives or dill.
