100 g cream quark
100 g mascarpone
2 tbsp cold espresso
1 tsp cinnamon
sugar
80 g amaretti

1 apple
1 tbsp butter
1 tbsp sugar
1/2 tsp cinnamon

Zubereitung

  1. Peel the apple, cut into quarters, core and chop into small cubes.
  2. Melt the butter.
  3. Add the sugar and caramelize until golden brown.
  4. Add the diced apple and reduce, stirring constantly.
  5. Refine the compote with cinnamon.
  6. Stir the quark and mascarpone with the cold espresso and cinnamon until smooth.
  7. Sweeten the mascarpone cream with sugar to taste.
  8. Roughly crumble the amaretti and divide between small glasses.
  9. Spread the apple compote over the amaretti in the glasses.
  10. Pile the mascarpone cream on top of the compote.
