Olive and potato mash

Potatoes, olives, olive oil and cream make a delicious Mediterranean mashed potato.

4 potatoes
salt
1 clove of garlic
40 g black olives (seedless)
100 ml cream
4 tbsp olive oil
salt

Zubereitung

  1. Peel the potatoes and dice evenly into large pieces.
  2. Just cover the potatoes with well-salted cold water and bring to the boil.
  3. Cover the potatoes and cook for approx. 15 minutes.
  4. Peel and finely dice the garlic.
  5. Pick the olives into large pieces.
  6. Drain the potatoes.
  7. De-steam the potatoes in a hot pan, stirring constantly, until they crumble.
  8. Gradually work the cream into the mash.
  9. Work the finely diced garlic and oil into the cream mash.
  10. Fold the olives into the mashed potatoes.
  11. Season the olive and potato mash with salt to taste.

The mashed potatoes are also delicious with green olives.
