Pasta with sausage and caraway sauce

1/2 onion
1 tbsp olive oil
100g pork sausage meat
2 tbsp tomato paste
1/8 l red wine
1 can of chopped tomatoes (400 ml)
1 tsp coriander seeds
1 tsp caraway seeds
salt
pepper
250g spaghetti

Zubereitung

  1. Peel and finely dice the onion.
  2. Heat the oil in a pan.
  3. Sweat the onion cubes in the heated oil until the onion cubes are translucent.
  4. Add the pork sausage meat to the glazed onion cubes and fry vigorously while stirring.
  5. Add the tomato purée to the sausage meat and fry briefly while stirring.
  6. Deglaze the sausage meat with the red wine and reduce until the sauce no longer smells of alcohol.
  7. Add the chopped tomatoes to the sauce.
  8. Finely crush the coriander and caraway seeds in a mortar.
  9. Add the crushed spices to the sauce.
  10. Reduce the sauce for approx. 15 minutes, stirring occasionally, until it is creamy.
  11. Season the sauce to taste with salt and pepper.
  12. Pour the water into a large pan, season well with salt and bring to the boil.
  13. Cook the spaghetti in the boiling water for approx. 8 minutes until al dente.
  14. Pour some of the pasta water into a small bowl.
  15. Drain the spaghetti and mix with the sauce.
  16. Adjust the consistency with a little pasta water if necessary.
