Pea soup with mint

Peas and mint combine to make a refreshing soup.

Zutaten für 4 Personen

1/2 onion
1 garlic clove
1 tbsp butter
250 g frozen peas
250 ml vegetable stock
100 ml cream
4 stalks mint
salt
cayenne pepper

Zubereitung

  1. Peel and dice the onion.
  2. Peel and dice the garlic.
  3. Pluck the mint leaves from the stalks and chop finely.
  4. Melt the butter in a medium saucepan.
  5. Sauté the diced onion in the melted butter until translucent.
  6. Add the garlic and frozen peas to the pan.
  7. Add the vegetable stock and simmer for 8 minutes.
  8. Puree the soup and pass through a fine sieve.
  9. Add the cream.
  10. Season the soup to taste with salt and cayenne pepper.
  11. Sprinkle the soup with the mint.

The soup also tastes very good with basil or tarragon.
