Spicy peanut soup

1 onion
1 garlic clove
1 bell pepper
1 chili pepper
vegetable oil
3 tbsp peanut butter
1 can of chunky tomatoes (400ml)
200 ml vegetable stock
salt
cayenne pepper

Zubereitung

  1. Peel and finely dice the onion.
  2. Peel and finely dice the garlic clove.
  3. Quarter the bell pepper, deseed and dice to the size of a pea.
  4. Slice the chili pepper lengthwise, deseed and dice.
  5. Heat the vegetable oil in a small pan.
  6. Sauté the onion, garlic, bell pepper and chilli pepper cubes until the onions are translucent.
  7. Stir in the peanut butter.
  8. Add the tomatoes and vegetable stock and bring to the boil.
  9. Allow the soup to simmer for approx. 10 minutes.
  10. Season the soup to taste with salt.

You can serve the soup with chopped peanuts.
