Sprout salad with roasted sesame seeds

The fine sprout salad is usually served as an amuse gueuele in Japanese restaurants.

300g bean sprouts
1/4 cucumber
0.5 red chili pepper
1 spring onion
2 tbsp sesame seeds
1 tbsp sesame oil
2 tbsp soy sauce

Zubereitung

  1. Deseed the cucumber, finely dice and place in a bowl.
  2. Cut off the top and bottom of the spring onion, peel off the outer skin and cut into fine rings. Then add to the cucumber in the bowl.
  3. Finely slice the chilli pepper with the seeds and add to the bowl with the other ingredients.
  4. Add the soy sauce and sesame oil.
  5. Blanch the sprouts in boiling water for 30 seconds
  6. Add the sprouts to the bowl. Carefully mix all the ingredients together.
  7. Roast the sesame seeds in a pan without oil until golden brown and add to the sprout salad at the end.

UNser TIPP

The sprout salad can also be refined with finely sliced carrots.
