Toasted white bread with tomatoes and pine nuts

Toasted white bread

8 slices of baguette
4 tbsp olive oil

Fried tomato slices

1 tomato
1 tbsp olive oil

Fresh cheese cream

1 tbsp pine nuts
1 clove of garlic
4 dried tomatoes
10 black olives
1 sprig of thyme
150 g cream cheese
salt
pepper

Crostini

8 slices of toasted white bread (homemade)
150 g cream cheese cream (homemade)
4 slices of roasted tomato (homemade)

Zubereitung

Toasted white bread

  1. Cut the white bread into slices and place on a baking tray.
  2. Drizzle the white bread with olive oil.
  3. Toast the slices of bread in the oven at 180°C for 5 minutes on one side.
  4. Remove the slices of bread from the hot tray.

Cream cheese cream

  1. Toast the pine nuts until golden brown all over, shaking the pan regularly and keeping an eye on them.
  2. Remove the pine nuts from the pan and leave to cool.
  3. Roughly chop the pine nuts.
  4. Peel the garlic and dice very finely.
  5. Finely dice the sun-dried tomatoes and olives.
  6. Pluck the thyme leaves from the sprigs.
  7. Mix the garlic, thyme leaves, tomatoes, olives and pine nuts with the cream cheese.
  8. Stir the cream cheese cream until smooth and season with salt and pepper.

Fried tomato slices

  1. Cut the tomato into 4 slices.
  2. Heat the olive oil in a pan.
  3. Fry the middle 4 tomato slices briefly on both sides in the hot oil until very hot.
  4. Remove the fried tomato slices from the pan and season generously with salt and pepper.

Crostini

  1. Spread the cream cheese cream on the toasted slices of white bread.
  2. Place half a slice of roasted tomato on each cream cheese crostini.

UNser TIPP

Instead of pine nuts, you can also use other mild nuts or seeds, such as cashews, sunflower seeds or macadamia nuts. The cream cheese is also ideal as a dip for grilled meat.
