0.5 vanilla pod
0.25 l milk
4 eggs
5 tbsp sugar
2 EL Mehl
Zubereitung
- Grate the zest from the orange and place in a small pan.
- Slit the vanilla pod lengthwise with a small knife and scrape out the vanilla pulp.
- Add both the scraped-out pod and the vanilla pulp to the orange zest in the small saucepan.
- Add the milk to the orange zest and vanilla in the saucepan and bring to the boil.
- Remove the spiced milk from the heat and leave to cool for approx. 5 minutes.
- Separate the eggs and place the egg yolks in a mixing bowl.
- Beat the egg yolks with the sugar using a hand blender for approx. 8 minutes until creamy and very light and fluffy.
- Fold the flour into the egg cream using the hand blender.
- Stir the cooled milk into the egg cream.
- Pour the egg-cream-milk mixture back into the pan and thicken over a very low heat without boiling, whisking constantly.
- Pass the vanilla cream through a sieve and leave to cool.
UNser TIPP
If you sprinkle the warm surface of the cream thinly with sugar, no skin will form.
