Tomato and bean ragout

2 spring onions
0.5 garlic cloves
250 g princess beans
2 tomatoes
1 tsp butter
2 tbsp olive oil
salt
pepper

Zubereitung

  1. Clean the spring onion and cut into rings.
  2. Peel the garlic and dice very finely.
  3. Halve the tomatoes, remove the seeds with a spoon or small knife and cut into strips.
  4. Heat the butter and olive oil in a pan.
  5. Sauté the diced onion and garlic in the heated fat until translucent.
  6. Add the green beans and cook for 3 minutes.
  7. Add the tomato strips and cook for a further 2 minutes.
  8. Season the tomato and bean ragout with salt and pepper to taste.

UNser TIPP

Instead of tomatoes, halved cherry tomatoes or red bell pepper cubes are also suitable.
